Introducing Mace Knight

Mace Knight is Blue Mountain Hospital and Blue Mountain Bistro's new Food Services Manager. We are so excited to have him as a member of our team and officially introduce him to you. In order to help you get to know him a little better, we asked him a few questions:

Where were you born and where did you grow up?

Mace: I was born in Monticello, but I grew up in Blanding.

When do you remember first being interested in food or when did you know you wanted to work with food?

Mace: After I graduated high school, I went on a mission. Upon returning from my mission, I tried out quite a few different jobs to see what I enjoyed and what I could turn into a career, but nothing seemed to hold my interest. I didn't realize that I wanted to work with food until my brother asked me to come work for him at a fast food restaurant. I thought back to my mom who is a great cook and she had taught me everything that she knew about cooking up to that point. In the back of my mind, I always thought that there must be more to cooking and more ways to cook. I realized that I got tired of going to restaurants just to be disappointed and being served food that I could cook better myself. That is when I realized that I enjoyed it and enrolled in culinary school six months later.

What has your career been like in the food industry?

Mace: I started working with my brother at Iceberg and then enrolled into the Art Institute of Salt Lake. While in school, I interned at Log Haven where I got my first taste of fine dining. I worked in the school kitchen as I approached graduation and interned at the Hilton Garden Inn. Then, they hired me upon graduation. Two months later, I was promoted to Sous Chef and two years later to Executive Chef. I stayed there for 10 years.

What are you most excited about working at Blue Mountain Hospital/Blue Mountain Bistro?

Mace: I'm very excited about the new opportunities to learn and grow my food knowledge specifically about diets. I am also very excited about having the opportunity to be more creative with the food and menus that we offer at Blue Mountain Bistro and push us in a new direction.

What are your favorite foods?

Mace: When I was growing up, my favorite food was lasagna, potatoes, and beans of almost any kind. However, it's hard to say now because it's always changing depending on what I'm working on or what kind of foods I'm working with.
